This is a very refreshing salad with just a few ingredients.
3 cups chopped cooked chicken (2 breasts)
¾ cup mayo
Juice from 1 lemon
A couple of shakes of hot sauce
2 scallions diced
¼ cup chopped fresh basil
Salt and Pepper to taste
Mix the mayo, lemon juice, hot sauce, scallions and basil together in a medium bowl. Add chicken and stir well. Refrigerate until chilled and enjoy.
