1 – 4oz salmon
3 cups baby spinach
A handful of sliced mushrooms
Salt and Pepper to taste
1 small container of plain yogurt
Bake the salmon for 9 – 11 minutes or until cooked through.
In a sauté pan heat olive oil over med high heat. Add garlic and mushrooms and sauté until tender. Add spinach and cook until wilted. Mix together the yogurt, dill, salt and pepper.
Plate the spinach, topping with the salmon. Spoon on the yogurt mix and enjoy.
